 Vegan Banana Bread

 

 

Ingredients

  • 2 ripe bananas, mashed
  • 3/4 cup unsweetened almond milk -vanilla
  • ¼ cup honey
  • 1 ½ cups whole wheat pastry flour
  • 2 tablespoons ground flaxseed
  • 1 tablespoon baking powder
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract (I used madagascar vanilla bourbon extract)
    1 ½ cups whole wheat pastry flour

 

Directions:

  1. Preheat oven to 350°F. Grease an 8-inch loaf pan with coconut oil spray or canola oil spray.
  2. In a large bowl, whisk together 2 bananas, ¾ cups almond milk, and ¼ cup honey.
  3. Mix in 1 ½ cups whole wheat pastry flour, 2 tablespoons ground flaxseed, 1 tablespoon baking powder, 1 ½ teaspoons cinnamon, and ½ teaspoon salt. Stir until combined.
  4. Pour into pan, bake about 50 minutes or until golden brown and a cake tester comes out clean.  Remove from oven and allow to cool completely.
